Amish Breakfast Casserole is a fantastic entree for holiday breakfasts! This one uses 2 meats, 3 cheeses, hashbrowns, eggs and bell peppers. Amazing. Gluten free.
INGREDIENTS
- 1 lb. sliced bacon diced
- 1 medium sweet onion chopped
- 6 large eggs lightly beaten
- 4 cups frozen hash browns shredded, thawed
- 2 cups cheddar cheese shredded
- 1 1/2 cups small curd cottage cheese
- 1 1/4 cups Swiss cheese shredded
- 1 lb. mild, bulk sausage
- 1/2 red bell pepper diced
- 1/2 green bell pepper diced
- fresh, snipped chives for garnish

- In a large skillet, cook bacon and onion until bacon is crisp; drain.
